On Thursday evening, July 16, 2015, Crystal Springs Resort, 1 Wild Turkey Way, Hamburg, New Jersey, will celebrate Bastille Day (July 14), with a French wine dinner in the resort’s Wine Cellar.
An “An American in Paris – Bastille Day Wine Cellar Dinner” will feature a reception, four-course dinner prepared by Executive Chef Anthony Bucco, and wines showcasing the breadth of French winemaking regions with selections from Alsace, Loire Valley, Bordeaux, Rhone Valley and Champagne from the resort’s award-winning fine wine collection. Wine Educator Becky McNulty will lead a discussion of the wines during dinner.
The event will kick off with a wine and canapé reception in the Wine Cellar at 6:30 p.m.; dinner will commence at 7:30 p.m. Chef Bucco has created a four-course menu that will highlight French techniques and American seasonal ingredients.
To begin, Chef Bucco will serve a chilled Langoustine soup with tomato water and summer squash – his take on soup de poisson (fish soup). Colorado Lamb will follow with byaldi, a variation on ratatouille. The next course will pair pungent French Burgundian cheese, Epoisses, with sour plums and almond sable made with mangalitsa lard. To finish, guests will enjoy Mille Crepes, a light, multi-layered cake made with wine berries served with rosé wine sorbet and rose petals and paired with Rosé Champagne.
