Nicholas - Black Truffle Pasta MenuBeginning Monday, March 21, and continuing through Friday, March 25, 2016, for one week only, Restaurant Nicholas in Red Bank, New Jersey, will be serving a special menu combining black truffles and a variety of the restaurant’s home-made pastas that highlight the freshest of early spring ingredients.

Amuse: Truffle Potato Soup

First Course: Poached Hen Egg, Cave-Aged Cheddar Foam, Black Truffle, Chives, Potato Bread Toast, Foie Butter

Second Course: Truffle Macaroni and Cheese, Black Truffles, Brown Butter Breadcrumbs

Third Course: Classic Truffle Risotto, Mushrooms, Truffle Foam

Fourth Course: Lobster, Potato Gnocchi, Broccoli Olive Oil Purée, Parmesan Cream, Spring Pesto

Fifth Course: Cheesecake Strawberry Truffle Compote, Lemon Vanilla Shortbread
