Crystal Springs Resort - Wine Cellar DinnerOn Tuesday, May 16, 2017, Crystal Springs Resort in Hamburg, New Jersey, will host a special dinner featuring the vintages of Ceretto Wines of Alba, Italy. The special guest of the evening will be Federico Ceretto.

Mr. Ceretto is the grandson of Riccardo Ceretto, who established the Ceretto Casa Vinicola in Alba, Italy, before his father, Bruno, and uncle, Marcello Ceretto, acquired vineyards in the most desirable sites. Ceretto is one of the few producers to be known for both its Barolo and Barbaresco; and their wines are considered to be some of the finest expressions of Piedmont’s Nebbiolo grape.

Executive Chef Anthony Bucco has created a five-course menu to pair with these extraordinary wines.

Course One: English Peas: Buratto, Mint Fried Bread; Wine Pairing: 2014 Arneis, Blangé, Langhe

Course Two: Morels: Ramps; Wine Pairing: 2015 Dolcetto d’Alba, Rossana

Course Three: Rabbit: Romaine, Roots; Wine Pairing: 2012 Barbaresco

Course Four: Duck: Turnips, Spinach; Wine Pairing: 2011 Barolo

Dessert: Strawberries: Cardamom Sponge, Zabaglione; Wine Pairing: Moscato d’Asti

The evening will begin with a 6:30 p.m. reception in the Wine Cellar, where guests will enjoy a glass of Champagne and a brief tour of the cellar. Dinner in the Wine Cellar will follow at 7:00 p.m.
