Crystal Springs Resort in Hamburg, New Jersey, the Garden State’s premier culinary destination and only four-season resort, recently announced that Aishling Stevens is now executive chef of Restaurant Latour, as well as resort executive chef.
A veteran of kitchens in Australia, England and New Jersey, Chef Stevens takes the reins as the first female chef to run the resort’s expansive culinary operations, including the Chef’s Garden, Crystal Tavern, Springs Bistro, and Restaurant Latour.
In her new role, Chef Stevens has already put her culinary imprint on Restaurant Latour with a new menu that will make its debut tomorrow, July 26th. The menu will follow the rhythm of the growing seasons and will change frequently. Two options are offered: a four-course prix-fixe with multiple choices in each category ($115.00 per person) and a seven-course chef’s tasting menu ($155.00 per person). The tasting menu is designed as a progression of dishes (not available on the prix-fixe) that highlight the best ingredients of the season.
Each menu may be paired with selections from the restaurant’s award-winning wine cellar (recently inducted into the Wine Enthusiast’s Hall of Fame), with 40 wines available by the glass that provide the sommeliers the flexibility to create unique pairings for each guest’s menu and preferences ($55.00 pairing with the prix-fixe; $65.00 with the tasting menu).
