On Monday, June 18th, 6:30 p.m., Chakra Restaurant, Paramus, New Jersey, will host another in its popular series of wine dinners. This four-course dinner will feature the vintages of California’s Clos Pegase Winery.

Winemaker Richard Sowalsky of Clos Pegase will be on hand to introduce his wines and answer diners’ questions…

Reception: Hors d’Oeuvres; Wine: Clos Pegase Sauvignon Blanc, Mitsuko’s Vineyard, 2009

First Course: Butter-Poached Lobster, Artichoke-Potato Salad; Wine: Clos Pegase Chardonnay, Mitsuko’s Vineyard, 2009

Second Course: Brioche-Crusted Salmon Medallion, Fava Beans, Mushroom Duxelle, Beurre Rouge; Wine: Clos Pegase Pinot Noir, Mitsuko’s Vineyard, 2008

Third Course: USDA Prime-Aged Meyer Natural Angus Sirloin, Cassis-Red Shallot Confit, Parsnips; Wine: Clos Pegase Cabernet Sauvignon, 2007

Dessert: Mascarpone Parfait, Grilled Apricot, Cilantro, Tokaji Gelée; Wine: Tokaji, Royal Tokaji Mád Cuvée, 2009

The cost of the Clos Pegase wine dinner is $69.00 per person (plus tax & gratuity). Wine pours are 3-ounce tasting portions. Additional glasses will be available at $8.00 each.
