Truffles, Black & WhiteWhite truffle season usually ends in late December or early January. Black truffles enter the scene just as the whites are fading. At Stage Left in New Brunswick, New Jersey, it is the restaurant’s tradition, whenever there is this interesting crossover, to serve a tasting menu in the week between Christmas and New Year that features both.

Black and white truffles are quite distinct. The aroma is slightly different and the applications are different as well. Black truffles are more likely to be put into a dish, like under the skin of a bird while still cooking, whereas white truffles are shaved on top of a dish after it is finished. If you are free between the holidays, this is a wonderful opportunity to experience one of the great pleasures of nature.
