New Federal Bar Restaurant to Open in Brooklyn, NY

Federal Bar - BrooklynAfter almost exactly four months of preparation and build-out, Federal Bar Brooklyn is scheduled to welcome its first customers at 367 Metropolitan Avenue in Williamsburg on Friday, June 19, 2015. Owner Knitting Factory Entertainment (KFE), which also owns the Knitting Factory concert house next door, is interpreting its locavore gastropub concept in an intimate space seating fewer than 50 guests under the toque of Executive Chef Brendon Doyle.

“We are providing local and hyper-local craft beer options,” notes Chef Doyle. “Of our fourteen draft lines, nine are from New York and, on opening, seven are from breweries in in Brooklyn.” Current features include Williamsburg’s own Brooklyn Brewery; Threes Brewing from Gowanus; Other Half Brewing Co. from Caroll Gardens; and Braven and Warflag from Greenpoint. “The selections are built on my relationships and tastes,” he goes on to say, “and my taste is small-batch.”

On the spirits and cocktails side, the same concepts prevail. The cocktail menu, still being worked out, will feature inventive new cocktails as well as interpretations of obscure and venerable classics.

The food menu, which is locally sourced, offers a mix of original creations and new twists on familiar favorites. Menu items will vary with the season and availability of local ingredients and run the gamut of influences. Sampling includes: Beef Heart Poutine with duck fat potato, demi-glace and curds; Mac & Cheese with Orecchiette, broccoli and fried panko; the Metropolitan Dog with Hudson Valley duck sausage, Dr. Browns root beer onions, brown mustard and tomato jam; Spicy Roasted Cauliflower with charred greens, faro, and parsley & almond gremolata; and a Braised Pork Shank with sweet and sour peppers and stone fruit slaw. There will also be a brunch menu.

On his approach to the menu, Chef Doyle explains: “We think it’s a little different and appropriate to the neighborhood, rebellious as it may seem elsewhere. On the other hand, there’s a certain whimsy to the way I create dishes, and I work to try and create dishes that are not part of a typical culinary combination. It’s a fun way to approach something that too many people take too seriously.”
