Nicholas - Virgile Lignier Winemaker DinnerOn Tuesday, February 2, 2016, Restaurant Nicholas in Red Bank, New Jersey, will host an extraordinary evening with Virgile Lignier, winemaker of the renowned estate Domaine Lignier-Michelot.

Virgile is the third generation of his family to work the vines of Morey St. Denis (as well as the neighboring villages of Chambolle Musigny and Gevrey Chambertin). Virgile was handed the reins by his father in 2000; and he made immediate changes that reflected his own philosophy – including moving the domaine to fully organic viticulture.

Now, with 20 plus vintages of experience, Virgile is producing what industry insiders are calling the best wines of this prestigious village.

Virgile will be on hand to guide diners through the 2013 vintage, as well as a few older wines selected to best complement the restaurant’s seasonal tasting menu.

First Course: Beef Carpaccio, Burgundy-Soaked Cherries, Pickled Shallot, Pecorino; Wine Pairing; Lignier-Michelot, Bourgogne Rouge, 2013

Second Course: Hand-Rolled Ricotta Cavatelli, Braised Oxtail, Manchego; Wine Pairing: Lignier-Michelot, Chambolle Musigny, Vieilles Vignes, 2013

Third Course: Roast Loin of Veal, Heirloom Carrots, Stewed Lentils; Wine Pairing: Lignier-Michelot, Morey St. Denis, Rue de Vergy, 2013

Fourth Course: Slow-Braised Beef Short Rib, Creamy Polenta, Oregano Chimichurri; Wine Pairing: Lignier-Michelot, Clos de la Roche Grand Cru, 2011

Fifth Course: Beufort d’Ete’ Cheese, Honey Crisp Apple, Toasted Hazelnuts; Wine Pairing: Lignier-Michelot, Nuits St. George, Aux Murgers 1er Cru, 2012

Sixth Course: White Chocolate Orange Mousse, Yuzu Ice Cream, Orange Caramel

The cost of the six-course Lignier-Michelot winemaker dinner is $195.00 per person (plus tax and gratuity).
